Make Smokey Apple & Kale Salad
This is such a tasty and incredibly nutritious salad to make and apple works so well with our Smoked Chickpea Houmous. Kale is known for containing vitamins K, C, A, E, B, Omega 3 fats, calcium, iron, healthy protein and much more, but you can also use other leaves like spinach, watercress, rocket or a mix even.
Here’s how to make it:
YOU WILL NEED
Servings: 2-3
INGREDIENTS
1 tub of Smoked Chickpea Houmous (2 tablespoons)
6 large handfuls of curly kale
1 crisp apple
3 tablespoons of mixed roasted nuts seeds
5 radishes
1 lemon
2 tablespoons of cider vinegar
2 tablespoons of olive oil A pinch of pepper
INSTRUCTIONS
1. Bring a large pan of water (with a steamer section) to the boil. Blanch your kale in the steamer for 2 minutes then drop it into a bowl of ice-cold water and put to one side
2. Put the nuts and seeds into the oven for 10 minutes at 150 degrees
3. Meanwhile, make the salad dressing by mixing the olive oil, cider vinegar, houmous and pepper together 4. Thinly slice the radishes into cylinders and apple into matchsticks. Immediately drench the apple in lemon juice to stop it going brown and put these ingredients into your salad bowl
5. Drain the kale and add this to your salad bowl
6. Remove the toasted nuts and seeds from the oven and add these to your salad bowl
7. Finally drizzle your dressing all over your salad and mix
